Eggs are a seriously favorite food for most people around the world. They are widely used in both savory and sweet dishes. There are many ways to cook eggs: poached, boiled, baked, and roasted. Despite innumerable cultural differences we all have favorite ways of cooking eggs.
Eggs are delicious on their own, but when cooked with exotic spices and local ingredients they become a popular traditional meal. Many people like cooking eggs as they are tasty and easy to cook.

Preparing the eggs
Crack all the 450 eggs carefully. Pour the eggs into different bowls and whisk them lightly. In a pan, fry cumin seeds, cardamom, and cinnamon. After frying the spices, grind them into a fine powder, and set them aside. Pour cooking oil 1-inch deep into a large frying pan, and add small amounts of the whisked egg into the pan, and fry each batch for 2 to 3 minutes.
Cooking the curry
Add cooking oil to a large pan, add onions, green chilies, garlic, salt, and onion paste and fry for 5 minutes. Add garlic paste, coriander powder, turmeric powder, cumin paste, red chili powder and mix all the ingredients thoroughly. Pour some water into the mixture, and add chopped potatoes to the pan. Add more water and let the potatoes boil for 5 minutes. Add cardamom powder, cumin powder, salt and finally place the fried eggs in the pan. Gently stir the mixture until the fried egg pieces completely mix in with the potatoes and spices.
Cooking the rice
This egg curry tastes best with cooked rice. Fill a big pan with water, boil the water for sometime and add the rice to the pan. Wait till the rice boils and serve it with the fried egg curry. It usually takes 10 to 15 minutes.
-While frying the eggs, be gentle, and use a spoon to avoid clumps forming. Also, break-up the fried eggs into small pieces.
-Do not overcook the cumin seeds because they will change the taste of the recipe.
