Eisbein with Potato Salad


Pork knuckle
Salt and pepper to taste
1/8 cup thyme
1 tbsp cumin
Olive oil
1 onion
2 carrot
3 cloves of garlic
Chicken broth
Tomato paste
1 potato
Corn starch


1.Clean and try the pork knuckle skin. Cut it into square pattern. Season with salt, pepper, thyme and cumin.

2.Add olive oil in a skillet. Deep fry pork knuckle until golden brown. Add chopped onion,carrots, celery, chicken broth,tomato paste, Season with salt and pepper. Then bake at 375°F/190°C for about 2 hours and a half.

3.To make salad: Cook the sliced potatos in boiling water for 10 minutes and transfer to a mixing bowl. Add minced onion,parsley, lemon juice, salt and pepper, olive oil. Stir well.

4.Take out the pork knuckle from oven. Garnish with potato salad.

5.Serve and enjoy.
